Cabbage Salad with a Sesame Vinaigrette
This might be the simplest salad I've ever made. But it is absolutely delicious. Eddie and I usually split a cabbage as a dinner side but I could totally eat a whole head of cabbage when it's prepared like this!! The vinaigrette is loaded with that sesame flavor but still light. All you really need is the cabbage and green onion for veggies but you could add some citrus or other veggies for crunch like carrots or bell peppers... either way, you're gonna love it!! Ingredients:
Green Cabbage, shredded
Green Onion, sliced or slivered
Carrots, Shredded (optional)
Oranges, Sliced or segmented (optional)
Sesame seeds
Nuts, Chopped almonds or cashews
Vinaigrette:
1/4 cup soy sauce
1/4 cup Rice vinegar
2Tbsp Honey
1-2 Drizzles of neutral oil
1-2 Drizzles of Sesame Oil
Salt & Pepper
Combine shredded cabbage, green onion and any other veggies you decide to include in the salad. Set aside.
Make your dressing. Combine soy sauce, rice vinegar, honey, salt & pepper, and sesame oil. Taste and season accordingly. Then add your neutral oil and whisk. Pour dressing over veggies and combine. Let it sit in the fridge for a bit so that the dressing absorbs into the cabbage, just a few minutes is enough.
Top with your nuts, sesame seeds when serving and Enjoy!!!
