Fresh roasted coffee is essential for a great cup. There are two schools of thought. The roast and brew right away and the roast then wait a few days for the bean to relax a bit. I highly recommend you go and try both methods! It's a super interesting journey. I happen to prefer the roast then wait 4-14 days depending on the bean and the flavor should be just right. Preferable in a pour over.
