Fig Salad with Prosciutto and Burrata


This salad makes Figs the star of the show!! We've been enjoying the delicious Kadota figs from Urban Edge Farms in Brentwood and this salad was the perfect way to highlight all the goodness of the fig.

I guess this post is more of a blog and less of a recipe. The ingredients are interchangeable but the base is always the same; a green, a soft cheese, a crunchy nut, and a glaze. 

In this case, I had arugula so I tossed in some olive oil and balsamic vinegar. Use that as the base of the salad. Then I cut the figs into quarters and place on the salad. Next is the cheese!! I used burrata and just took chunks and placed throughout salad. You could use goat cheese or mozzerella if you prefer, burrata for me was just right!

Next is the prosciutto. Roll up a few pieces and place around the salad. Then your nuts of choice; I used some candied walnuts but you could use pistachios or pine nuts if you wanted. Finally, I topped with some organic balsamic glaze for a touch of sweetness. You could also use honey if you like. 

AND THATS IT!! It's zesty and sweet and tart and SOOO GOOD!!! MUST TRY!!
