Persimmon Salad (Autumn Salad)
We are all about following the seasons and this salad gives all the Fall vibes. We want to highlight the persimmons since they are current seasonally and so delish but there are so many other components to this dish. Feel free to omit the the things you don't want or have but this hits all the notes (Salty. Sweet. Savory. Delish!!!). And the perfect way to use all of your seasonal produce included in your packs.
Fuyu Persimmon is the star! Thinly slice with a mandolin or do it on your own with a nice, sharp knife. They are usually seedless but sometimes they have seeds, simply remove when you slice as you would apples or citrus.
Use any greens to accompany, we used red lettuce and arugula from Urban Edge Farms in Brentwood,. CA. The arugula has a spicy bite and the red lettuce is the perfect base to the salad. Add any seasonal fruits you'd like; we used blackberries from Alba Farms in Watsonville and Pomegranate seeds from Frog Hollow in Brentwood, CA. We also had some dried cranberries and homemade candied walnuts in our pantry that we used to top the salad. We also added some crumbled goat cheese for a little creaminess and cheesy goodness (totally optional).
Our dressing was made with a blend of some oranges we juiced and some Nana Mae's Apple Cider Vinegar and a bit of Dijon Mustard, seasoned to taste. A simple dressing with beautiful organic and dry-farmed ingredients made the most beautifully balanced salad!!!
This salad is perfect for your holiday season and great for those who don't like a basic garden salad. Not only is it great for the holiday season but it's a salad that your NON-salad lovers will enjoy!!! give it a try and let us know what you think!!!

Salad Ingredients:
Red Lettuce & Arugula
Fuyu Persimmon (sliced)
Pomegranate Seeds
Blackberries
Dried Cranberries
Candied Walnuts (regular walnuts are fine here too)
Wash and Chop your ingredients and combine. THATS IT!
Dressing Ingredients:
2 Oranges (juiced)
1/4 Cup Nana Mae's Apple Cider Vinegar
1-2 Tablespoons of Dijon Mustard
1-2 Tablespoons of Honey
3-4 Tablespoons of Olive Oil
Salt & Pepper (or any seasonings you'd like to add)
In a bowl, combine all the ingredients except for the olive oil. Whisk and taste. Season until you're satisfied with the flavor, then drizzle the olive oil and whisk. Pour over your salad and ENJOY!!!
