
Roasted Purple Cauliflower with Sesame Panko

Purple Cauli is beautiful!!!! And it's so delicious! You can prepare it just like the regular cauliflower... roasting, steaming, turning into a soup. This recipe is roasted... the roasting helps keep the color. And the panko topping is a MUST!! You could totally sub with broccoli or Romanesco too.
Ingredients:
Purple Cauliflower (You could also use regular cauliflower, broccoli or romanesco)
Olive Oil
Salt & Pepper
You could simply steam your cauliflower pieces. Or you can roast like we did at 450 for about 10-15 minutes until you see some char. Be sure to drizzle with oil and a little S&P before roasting.
Topping Ingredients:
1-2 tbsp Butter
4-5 cloves of Garlic, slivered
1/4 cup Sesame Seeds
1 cup Panko Breadcrumbs
Salt & Pepper
Lemon Zest
Parsley (optional)
For the topping, melt your butter in a pan at medium heat. Toss in your garlic and stir 1-2 minutes until the garlic is browned. Add your sesame seeds and breadcrumbs. Stir to combine and turn off heat. Season with salt, pepper, lemon zest and any other seasonings or herbs you prefer (we added parsley). That’s it! Too your veggies and store any leftovers in an air-tight container or ziplock.
Other Suggestions:
Make a simple yogurt sauce with greek yogurt, lemon zest and lemon. Use as the base of your dish. Great for dipping your cauliflower and breadcrumbs in.
I also added an arugula pesto for a peppery bite. Another time, I sprinkled some couscous and balsamic caviar in the mix. This dish is SOOO versatile. Make it your own with some hot chili oils or sauces with your favorite flavors
