
Jimmy Nardello Romesco Spread/Dip

Okay guys! This is a super simple recipe you can use as a dip or a spread, even as a pasta sauce. You can use any red sweet pepper but Jimmy’s have a distinctive sweet taste to them and roasted them brings out all the goodness.
The base ingredients are peppers, nuts, garlic, Olive Oil, S&P. A few optionals that I included are roasted tomato’s, Parmesan, and toasted bread. Trust me, you’ll be cleaning the plate with this one….
Ingredients:
Jimmy Nardellos (can be subbed with another mild pepper like red bells)
3 Cloves garlic
4-5 Roasted RomaTomatoes(optional)
1 cup Parmesan (optional)
1 slice toasted bread (optional)
3-4 tablespoons Red Wine Vinegar
1/2 cup olive oil

Directions:
Roast your Peppers, Garlic, and Tomatoes. I put everything in a pan and broiled for about 5min on each side until everything gets toasty. Roasted tomato’s are traditionally used but you could also sub with a few tablespoons of tomato paste or skip altogether.
Toast your nuts. I’ve used almonds but you can use hazelnuts, pine nuts or walnuts. Once toasted, chop them up as much as you can. They are going into the food processor but they won’t break down easily so help out the process a bit by chopping them up beforehand.
Toss your roasted and toasted items into the food processor. Add a few tablespoons of red wine vinegar. Season with salt & pepper. Some other optional spices to consider: Garlic Salt, Onion Powder, Cajun Spice, Red Pepper Flakes.
If you choose to use Parmesan, include that in your processor as well. Drizzle in your olive oil to smooth things out a bit. Taste and season to your liking. Serve on toast, with crackers as a dip, or use as a base sauce for a delicious pasta.
