Eggs in a Spinach Nest

This 3-ingredient guilt-free brunch idea is so simple but loaded with good stuff. You won't feel bad about filling up on this dish with about 2-3cups of spinach in each serving.

What you'll need:
1 Diced Onion
2-3 cups of Spinach
1-2 eggs

Heat oil in pan. Cook the onions until translucent (about 3-4 minutes).

Add Spinach in batches. It will wilt as it cooks and you can keep adding until your pan is covered. Cooks in about 3-5 minutes.

Once spinach is cooked down, create holes to add the egg. Put a bit more oil and crack your egg into the holes (nests). Cover pan with lid and let the egg cook for about 3-4 minutes until the whites are cooked through.
